Black Beans
Yields: 8 cups
Ingredients:
- 1-16 oz package dried black beans
- 6 cups water
- Soak beans overnight or boil for 2 minutes and set aside for 1 hour.
- Simmer beans covered for 30 minutes, skimming off any foam.
- Saute in large skillet over medium-high heat 10 minutes:
- 5 slices bacon, chopped
- 2 green bell peppers, chopped
- 2 medium onions, chopped
- 4 garlic cloves, minced
- Add onion mixture and simmer uncovered for 30 minutes, stirring occasionally.
- Add:
- 1 tsp dried oregano
- 1 tsp ground cumin
- 3 bay leaves
- simmer uncovered for 30 minutes, stirring occasionally.
- Discard bay leaves
- Stir in:
- 1/4 cup olive oil optional
- 1 TBSP red wine or apple cider vinegar
- Pinch red pepper flakes
- 4 teaspoons sugar
- 3/4 tsp salt
- 1/4 tsp pepper
- Cool and chill up to 2 days
- Cook over medium heat, stirring often, until thoroughly heated. (I heated in the crock pot.)
- Serve with :
- sour cream
- chopped green onion
